I had to make an after dinner dessert for friends this weekend. There are fantastic home grown cherries in season at the moment so the decision to make a rich chocolate cherry tart was an easy one.
A shortcrust pastry case filled with a baked mascarpone and dark chocolate filling. Hidden in the filling are whole cherries that had been cooked in a kirsch syrup. The cream on top was infused with kirsch and vanilla before being whipped.
