It’s just a fantastic time of year for fruit at the moment. All the Summer fruits are still around combined with the Autumn ones just appearing. I decided to make a very berry cheesecake to celebrate them.
Its a baked cheesecake with a biscuit base. The cheesecake filling is combination of cream, cream cheese and yoghurt. I blitzed raspberries and blackberries with sugar separately and feathered into the top of the mix before baking.
Once cooled and cut into squares I topped each slice with vanilla whipped cream and a selection of fresh berries. The result was fab and everyone loves cheesecake!
