I had some beetroot to use up from the allotment so I thought what better to make than this cake.
Based loosely on Nigel Slaters recipe on the BBC website I set off this morning to make it. I decided on a long loaf shape as it cooks much more evenly than in a round tin and is easier to cut slices off. My addition to the recipe was a higher content cocoa chocolate as well as some chopped roasted hazelnuts.
We had a slice of it tonight, its really moist, and i’m sure it will make people happy over the coming days. You can definitely taste the beetroot though!
