I had a Tuesday evening pang to make some bread. I wanted something really savoury that would be perfect to make lunchtime sandwiches for the next couple of days so came up with these onion and mustard rolls. Loosely based on a Dan Lepard recipe I found on the net they are simply delicious. The onions are boiled in milk for about 5 minutes before being added to the dry ingredients along with water to get the right hydration level. Other ingredients include wholegrain mustard and a hint of sugar. After the last prove I brushed them with an egg wash and sprinkled them with sesame seeds before baking them for about 20 minutes.
