Time for some Sunday Spanish baking today. I love Tortas de Aceite having been brought up on them. They really are a staple biscuit in Spain, a bit like the Rich Tea over here. They are a yeasted biscuit flavoured with aniseed and lots of extra virgin olive oil. The dough doesn’t rise much during the first prove then it is divided into small portions and rolled out like little pancakes before being sprinkled with caster sugar and ground aniseed. There is no second prove, they go straight into a hot oven. The yeast works its magic though. The tortas puff up ever so slightly and the sugar caramelises around the edges.
