I wasn’t happy with my last attempt at Focaccia so decided to have another go. I made the same quantity of dough and proved it all in one go. Then I split it in two and made two loaves. The first was onion, rosemary, chilli and garlic. The second nice and simple olive with a sprinkle of black pepper.
They were much better this time. I treated them like making ciabatta and hardly handled the dough after the first proof and putting them in the baking trays. They ended up with nice irregular holes throughout and a really nice crusty exterior. Tasty.
